in a non reactive bowl combine the following:
4 cups thinly sliced seedless cucumbers.
⅛ to ¼ cup of rice wine vinegar.
And ‘some’ of the following:
¼ cup of finely sliced red onion.
¼ cup of fined diced capsicum.
1 to 3 teaspoons of liquid honey.
½ to 1 teaspoon sesame oil.
¼ teaspoon of red pepper flakes or ¼ dozen splashes of xo sauce.
3 tablespoon soy sauce.
2 tablespoon fish sauce.
A few splashes liquid smoke.
Salt and pepper to taste.
