    French fish bake:

    In a large oven dish or larger individual dishes assemble the following:
    700 gm cooked sliced potatoes preferably baked or fried.
    300 gm flaked lightly smoked fish.

    Top with the following:


    Béchamel sauce.

    ¼ cup chopped parsley.

    1 cup grated aged cheese.

    Bake at 180 c for at least 15 minutes.


    To make the béchamel sauce in a medium saucepan simmer the following for at least 5 minutes:
    500 ml milk.
    ½ whole onion.
    30 gm butter.
    1 clove.
    1 bay leaf.


    At the end add the following:
    Up to 30 gm of flour.
    A pinch of nutmeg.
    Salt and pepper to taste.
