In a large saucepan brown the following:
2.5 kg oxtail.
1 small sliced leak.
1 diced onion.
1 diced carrot.
1 stick of sliced celery.
And then add the following and simmer for at least ½ hour:
3 cups beef stock.
3 cups chicken stock.
200 gm sliced mushrooms.
1 cup wine.
1 cup canned tomato.
¼ cup brandy.
2 bay leaves.
2 thyme sprigs.
1 dozen black peppercorns.
And some of the following:
¼ cup soy sauce.
2 tablespoons Worcestershire.
1 dozen anchovies.
