I have never been a fan of surcharges on public holidays or weekends to cover staff penalty rates. If you can't afford to pay people what they are worth, then don't open a business. And it is not just about that, it is about people that work in aged care kitchens, hospitals etc, that don't have a choice sometimes when it comes to working weekends, if they are full or part time. They just have to suck it up, as they, like many people have mortgage, bills, kids, etc.
