    Yes, I do that, too - geröstete Kartoffeln (geröstete 'Erdäpfeln' in my case, Austrian!)  - need a bit of patience, but are delicious. Swiss do something similar, but with finer cut potatoes.
    BUT at German butchers one can buy potato dumplings pre-mixed and in individual small sacks and begin the cooking process by first putting into cold water, then slowly heat and allow to gently cook on low heat for 15 mins. - quite nice and also light -
    Brand: Pfanni - 'Kartoffel Klöße' - last time I bought them they cost $3.20 for 200g - glutenfree - but a bit of a chemical concoction, but really nice in meat juice from roast but light enough for serving with a creme sauce and chicken fillets.
