Today NBD is making sauce ( 6 lit pot ).... topped up with water

• all the over ripe tomatoes ( with skins) ( 4kg )
• 4 granny smith apples ( fallen off tree waste not want not)
• 5 Thai chili
• heaps of bazil,thyme,sage,mint,zaatar,and parsey ( fresh)
• 3 white field mushrooms ( large)
• several cloves
• grated nutmeg
• 4 sticks chopped celery
• 7 garlic cloves
• 3 dill pickled cucumbers
• 1 table spoon pepper
• 8 table spoons salt
• 3 cups raw sugar
• 3 cups Malt Vinegar
• simmer right down till thick
• Blend to death
• Put back in pot and simmer
• Jar while hot
