In a medium bowl marinate the following for an hour:
1 kg short-cut pork ribs.
1 egg white.
2 tablespoon cornflour.
2 tablespoon rice wine.
3 cloves pressed garlic.
½ teaspoon salt.
¼ teaspoon ground white pepper.
and some of the following:
4 tablespoons brown sugar.
4 tablespoon soy sauce.
3 tablespoon worcestershire.
½ dozen splashes liquid smoke.
In a wok fry in ½ litre oil.
Make the sauce in a small saucepan by simmer with the following for 5 minutes:
¼ cup stock or water.
¼ cup tomato sauce.
1 tablespoon white vinegar or rice vinegar.
1 tablespoon soy sauce.
2 cloves pressed and fried garlic.
2 teaspoon brown sugar.
