It all comes down to return on the assets etc. Those dryers can work 24/7 and kick out shedloads of powder which can then be stored in a warehouse for x months/years. It can then be mixed into IF or bagged as normal MP. Fresh needs a processing plant to make it and has a storage life of days and weeks.
In Aus 10% ?? of fresh milk has to go to domestic supply, so whats important in Aus doesn't have same drivers in NZ I guess.
