Spicy Mexican Soup:
In a pan fry the following:
1 medium minced onion.
1 splash of oil.
Then add the following and continue to fry:
3 tablespoon tomato paste.
2 tablespoons soy sauce.
2 dried chopped chipotle chillies or 1 dessert spoon chipotle chilli paste.
1 teaspoon cumin seed.
1 teaspoon dried oregano.
2 cloves pressed garlic.
1 tablespoon tequila.
1 dessert spoon brown sugar.
1 to two teaspoons scrimp sambel paste.
Finish off with the following bring to a simmer only:
1 l chicken and / or seafood stock.
Servings with the following:
Two servings of raw seafood.
A few knobs of burnt butter.
Serve with smoked tobasco sauce to taste.
