I no longer recall the butcher with the high reputation for their meat, but I used to buy French lamb shanks. I told my local butcher about what they were selling them for and that caused them to look very interested. Local butcher has awards and top apprentice in their staff. I rarely buy meat elsewhere except on bone ham and smoked salmon at local delli shop.
