I guess the size of the leg is a pretty good indication of it’s age.
Years ago sucker lambs were pretty small but were very tender because they were still sucking on the ewe.
The trend to export a lot of lamb has seen lambs get bigger and much heavier after being weaned and grown out and fattened.
When we used to dress our own lambs we used to hang them “tenderstretch” which always gave a good result.
