I find that 6hrs is normally enough for most slow cooking be it chuck or shanks.
Glad to hear dinner was nice.
Would be plenty of Osso Buc recipies on youtube.
Some little old ladies have informed me how to spell a couple of words too which is always a good thing.
Some moisture around today, a cool 20C
probably about $8 to butchers then.
I imagine those $20 shanks would be at least somewhat french trimmed.
