Actually it isn't easy to falsify an email if you are put in a position of having to defend its veracity to someone who knows what questions to ask and about how email works. And last I checked emails were still regarded as documents. But of course courts have rules of evidence and a suggestion that an email was or was not false would be sorted out against those rules of evidence.
