You are very correct about the flowery chips , full of air ? but I have one takeaway shop where I go when I need that chip fix, and they are great, crispy, salty and so moreish. A " punnet " costs $4 and hits the spot. I would never put any type of sauce on them as they are so good. I asked what type of chips they use and was told they are availably for commercial outlets only ???? That's fine with me, they can cook them for me, a treat.
