Torquay is at the start of the GOR, which is winding and slow driving making it hard to average much more than 40-50km/hr.
It is faster to take the inland road from Melbourne and cut across to the coast at say Apollo Bay near the Otway Ranges for an overnight stay.
Next day you could head west to the Seven Apostles then back track the length of the GOR to Torquay for another night and then head back to Melbourne.
A longer variation of that worked for me a few years ago.
