I did see the "peasant class" eat plenty of meat. Mainly rabbits and back yard chooks plus mutton which was a by-product of wool. There was a time when beef was a by-product of fat production but you needed to be a country family to have the access to it before it was sundried and turned into fertiliser. The secret of success (of sorts) is to be a country peasant and not a city one. The Irish were pictured as dumb but the were the ones that worked out it was best to emigrate or move out of the cities rather than be a starving city dweller.
Go west young man was an answer to many city dwellers in the past and beating that city magnet can be the first step out of poverty. In this world you make your own luck most times.
You can be "rich" without a lot of money. Easier in a rural area than a crowded city.
