    Immortal in that existence can not come from non-existence, so your constituent substance has existed without beginning and will continue to exist in some form even after decomposition.

    Also it is written that we are made in God's image. This suggests that humans have a spiritual component, a soul. The soul can be experienced as the focal point for love and compassion, for human qualities that cannot be explained solely by thinking of a human being as an animal or as a sophisticated organic machine. This rational soul is immortal.

    It is not a case of differing opinions. The tree of the knowledge of good and evil is a reference to the human world, the world of relative conditions. The snake is a metaphor for attachment to the human world. An animal connected to the earth by the entire length of its body. The meaning of death in Genesis 2:17 is that attachment to the human world is like death compared to attachment to the spiritual word. This becomes abundantly clear if one reads on about the tree of life, etc.

    Now I don't believe any of this answers your question. Nobody can ever describe the condition of the soul. Evidence, when all is said and done comes back to an act of faith. However the exquisite nature of the universe, the perfection of natural forces and the separation of humans by their qualities from the animal kingdom, suggests a purpose. That purpose may be the eternal progression of the soul towards the state of perfection of its Creator with its personality and life experiences intact.
