Thin pizza:
In a cup dissolve 1 teaspoon of yeast and ¼ teaspoon sugar in ¾ cup 44 c water and let stand until yeast begins to foam.
Combine 1¾ cup flour and ½ teaspoon salt in a large bowl. Pour in yeast mixture; mix well until dough comes together.
Transfer dough to a floured surface and knead for 2 minutes.
Add ¼ cup flour if dough is too sticky.
Roll dough into a 300 mm or more circle.
Place in grease pan or pizza stone.
Top with tomato paste pizza cheese and topping.
Cook at high temperature on the charcoal webber with the lid on.
