Beef or lamb salad:
On 2 or 3 dinner plates arrange the following:
200 gm salad greens.
200 gm berries if desired.
1 or 2 chopped spring onions.
Lightly sear 250 gm of lamb or beef stir fry.
Arrange on top of the salads.
Dress with the following dressing:
2 tablespoons fish sauce.
2 tablespoons rice wine vinegar
2 tablespoon rendered beef fat or reasonably concentrated chicken stock.
1 tablespoon red currant or other berry jelly.
1 dessert spoon sake.
1 dessert spoon of xo sauce.
1 teaspoon soy sauce.
1 teaspoon sesame oil.
A few splashes of liquid smoke.
