I have noticed (on TV) that good providores use that layering effect with prosciutto which is usually sliced very thinly like salami.
Actually went looking for prosciutto a while back and found it at a shop in Kawana called B-fresh. It's as close to your Charlie's as I'm likely to get up here. quite jealous now.
