Tomato Curry
In a medium pot fry the following:
2 minced tomatoes
1 medium minced onion
2 teaspoons minced garlic
2 teaspoon minced ginger
1 teaspoon red chilli powder
½ teaspoon cumin powder
½ teaspoon pepper
½ teaspoon turmeric powder
¼ teaspoon cumin seeds
2 cardamom pods
When brown add the following:
2 cups water
1 packet of chicken necks
¼ cup tomato paste
25 mm cinnamon stick
2 splashes light soy sauce
2 splashes rice wine
2 splashes liquid smoke
Simmer for at least ¼ hour
Remove chicken necks
Add the following and simmer for a few more minutes:
2 cup coconut milk
Small handful curry leaves
¼ cup chopped coriander
Serve on four servings of barbecue chicken or other meat
