We had our favorite meal tonight, roast lamb shoulder, i place a lamb shoulder on baking paper and also put a square of baking paper on top to avoid alfoil sticking, i then cover with alfoil and place in 180 degree oven for 30 minutes , i then reduce to 130 degrees for 5 hours after this i take off alfoil and baking paper that was protecting top of shoulder, increase temp to 180 and brown shoulder, when brown to suit take shoulder out and add potatoes, i boil potatoes for 12 minutes and then shake in colander to roughen surface before placing in baking dish..
