    Turkish fondue:

    Melt the following in a small fry pan:
    1 or 2 cups grated kasseri or kashkaval cheese.
    1 cup water.
    ¼ cup unsalted butter.

    And some of the following if desired:
    1 cup mozzarella cheese.
    ¼ cup goat’s milk feta.
    Soft herbs to taste.


    Thicken with cornflour or lecithin.
