Hi Bagman, I think Towie may have been referring to the "cod" this is where the testicles used to be, before their removal, its an indicator of the condition of a "steer" as is the brisket, rump & a few other areas;)

Bulls are generally used for mince & processed meats etc like sausages etc, not usually for typical table meats & dishes.
