Towie, far be it from me to disabuse you but, at least within my limited experience, very few cattle a butcher will be assessing at will have testicles to look at.
They will either be female, bullochs or bulls, can't think of any other alternative off hand. Bulls are not a desirable item for the table - maybe good in sausages, though.
