Problem is scaling the labour costs to sales is that the labour costs (with exception of Christmas casuals) are set. I remember an AGM or so ago Peter saying they already only have one on open and close and an extra cover person over lunch etc so not much opportunity to remove labour costs. Ultimately, if sales go up 10% it doesn't require extra labour...so if sales drop 10% it's the same the other way around.
