Convection is seeing a change in the state of the energy as it moves up against gravity as it moves through the atmosphere. The result mimics the lapse rate. Go figure.
Now what happens when air descends. This phenomenon happens all around the world and is also experienced in events known as Foehn winds for example. Or stratospheric warming events in the polar regions where I have shown via the Met office video that the art of compression of which is the result of Gravity results in temperature increases by as much as 50'C
