The black shapes are evaporation ponds. Basically first step of the process chain after the brine is pumped out of the salar. When a black evaporation pond turns light blue / almost white it simply means that it is filled with brine. Obviously, because these ponds are so big, looking at changes over time is the easiest way to see buidling progress via satellite images.
