Re oils, I had the same question and got an answer from someone close to Dr Esseltyne.
Oils are processed ie separated from the plant host, if you will and therefore not a whole plant food. I get my oil from tahini, that is ground sesame seeds, from avocado, which is really a fat, cashews, also a fat, Brazil nuts, again a fat, peanuts, walnuts, flax seed...
All sources of oils, fats, and all whole plant foods. I think what Esseltyne is getting at is nothing processed or separated into different products.
