Considering nearly 87% of NSW (16+) are on track to be fully vaccinated, I bet many people here will eventually realise the benefits and get vaccinated. By October 11, you can bet probably 90% or more (16+) will be on track to be fully vaccinated. And once Australia opens up and there's more severe unvaccinated cases this will encourage people even further.
It'll probably only end up being about 3-4% who choose not to vaccinate.
