@traderabcde - anything naturally soured - I used wine vinegar for ages, have changed to apple cider vinegar - lemon juice is also a better base for salad 'vinaigrette' - but needs a bit of honey, or a dash of sugar (poison!) and a good oil - it is very sour - Anglos don't like 'sour' - I use 1/3 water to make my vinaigrette milder - and 1/3 good oil I use sunflower oil, best is olive oil. Watch out for natural oils, they go rancid quickly - keep in fridge.

- Sauerkraut, eaten raw, little bits on an empty stomach or before meals is also great to keep the micro-'fauna' which lives inside us, fed - which keeps us healthy
