You speak of French and Italian diets - and even they have their differences. In Italy - the north cooks different to the south. In the north they like to use butter whilst the south likes to use olive oil. Parmesan cheese is predominantly used in the north whilst the south uses pecorino (made from sheep's milk). The north prefers rice whilst the south loves its pasta and every region has its own pasta types. Many will not know that there is no such thing as a spaghetti bolognese in Italy - the spaghetti comes from Campania and the bolognese sauce - or ragu' - comes from Bologna of course. One would therefore have a tomato sauce with spaghetti or fettucini with ragu.

I was surprised too when driving around the Peloponnese a couple of years ago how much the Greeks there like their chips...many meals came with deep fried sliced potatoes or potato chips.
