For example Sherpas in the Himalayas have evolved to survive in low oxygen air.

Australian aborigines have evolved to survive cold nights in the deserts and people have evolved ways to digest food.

Now that people are more mobile we see more mixing of genes but once people move to Mars a new species should evolve in 100,000 years or so!
