Sabah/Sarawak fits the time frame, beaches and weather! Kuching and Kota Kinabalu are safe, different, inexpensive and good fun. Try the Shangri La Resort up the coast from KK...romantic, great beach etc. Vespasian mentioned the Hilton in Kuching-brilliant location and inexpensive but 45 minutes from the beaches (but a brilliant pool set up!).
Taking my young damsal to Honkers and Singapore for her big 50 fairly soon. May not sound imaginitive but fun can be had when you do a bit of searching. Junks in Hong Kong/ Happy Valley Races etc. Island just around the corner off Singapore (Bintan) has good resorts whilst Clarke Quay in Singapore has finally given the island some decent night life!
November in New Zealand? Forget the beaches but spectacular views, activities around Queenstown, the wineries and the traditional touristy stuff.
