Well, to put it simply. You talk to people, specifically management and ask what the sales are like on the product between date x and date y. Some won't tell you but others are receptive to your requests.
Other stores that aren't particularly receptive leads me to writing notes in my diary - what products are on the shelf, how many, batch numbers etc etc.
One particular store in Footscray has sold 0 products so far this week.
