    Crab sauce:


    In a small saucepan bring to a simmer the following:
    1 bottle crab meat.
    3 cups clam juice or the like.

    And season with some of the following:
    100 gm butter.
    A few sherry.
    A few splashes soy sauce.
    A pinch of chili paste xo sauce or smoked tobacco sauce.
    2 cloves pressed garlic.
    1 diced shallot.
    1 teaspoon Creole or Cajun seasoning
    1 teaspoon Old Bay mix
    1 teaspoon oregano or marjoram (dried)


    Thicken slightly with flour egg yolk and cream.

    Serve with egg yolk seafood or paste!
