Brazilian seafood stew:
In a large pan fry to colour the following:
1 diced onion.
1 tablespoon olive oil.
1 teaspoon rock salt.
Then add the following and continue to fry:
1 diced capsicum.
2 tablespoons tomato paste.
4 cloves pressed garlic.
2 chipotle peppers.
2 pieces of thyme.
1 dessert spoon smoked paprika.
1 teaspoon ground cumin.
Cayenne pepper to taste.
Old bay to taste.
When cooked add the following:
420 ml can full-fat coconut milk.
1 bottle of clam juice or the like.
2 tablespoons soy sauce.
2 tablespoons Worcestershire.
½ glass white wine.
When starting simmer remove from heat and lightly poach.
500 gm small fish fillets and raw shelled prawns or other seafood.
Serve with rice ¼ cup chopped cilantro leaves and lime juice.
