    Fussion lobster thermidor:

    Make sauce with the following:

    One fried chop shallot.

    A knob of smoked butter.

    Then add 300 ml seafood stock or claim juice.

    Turn off and finish off with the following:
    150 ml cream mixed with one egg yolk.
    30 gm grated hard cheese.
    2 tablespoons chopped parsley.
    a few splashes of soy worcestershire and brandy.
    ½ teaspoon mustard or xo sauce.

    Serve on one medium cooked lobster cut in half or other seafood.
