Braised asian-style pork belly with orange honey and soy:
In a large sauce pan simmer to your liking:
1.2 kg pork belly or 2 kg pork hock skin-side scored.
1 cup water.
½ cup soy sauce.
Juice of 1 large orange.
3 strips peeled orange peels.
2 tablespoons pressed ginger.
2-star anise.
1 cinnamon stick.
1 or 2 chipotle sauce or liquid smoke.
4 cloves.
2 tablespoons brown sugar.
Simmer until tender.
Roast if you want skin to be slightly crispy.
