    Steak or tuna with Peking sauces:

    Make sauce with the following:
    1 cup of veal stock.
    ½ cup rendered beef fat.
    ½ teaspoon five-spice powder.
    4 tablespoons honey.
    4 tablespoons soy sauce.
    4 teaspoons hoisin sauce.
    2 cloves pressed garlic.
    2 teaspoons sesame oil.
    4 tablespoons dry sherry.
    A few splashes liquid smoke.
    A splashes of xo sauce.
    A few splashes worcester sauce.

    Thicken with lecithin.

    Serve with seared steaks.

    Traditional and original sauce served on steak.
