We'd have to ask a fishmonger or TGR itself, but one internet reference suggested that the normal shelf life of Atlantic salmon (obviously, stored appropriately) was nine days. So given the time it takes to transport into individual supermarket, market or fishmonger outlets, there's not an enormous amount of time with which to play.

From observation but not science, I've found that the 'shelf life' of many products in Oz is longer than officialdom decrees, but nagturally one doesn't want (as an uininformed shopper and consumer) to 'push it' too far.

I've not seen the sticker to which you refer. At my local WOW outlets - there are four with which I'm familiar, including one (QV Centre) in Melbourne's CBD, salmon sales appear to be good for TGR with reasonable turnover. I'd bet supermarkets always allow for some 'wastage' in their pricing of such items given short shelf lives.
