Marinate 2 kg pork belly in the follow for at least ¼ day:
½ cup olive oil.
½ cup soy.
1 cup cilantro / coriander.
4 tablespoon worcestershire.
1 tablespoon orange zest.
¾ cup orange juice.
½ cup lime juice.
¼ cup mint leaves.
¾ dozen cloves.
1 tablespoon oregano leaves or ½ tablespoon dried oregano.
2 teaspoons ground cumin.
1 teaspoon salt.
1 teaspoon black pepper.
Barbecue on the charcoal webber.
Serve with mojo sauce by bringing to a simmer.
The remainder of marinade and the following:
2 tablespoons lime juice.
¼ cup rum.
¼ cup orange juice.
Salt and pepper.
Finish off with two cups of hot water and a little corn flour.
