I can apreciate that to actualy controling the growing of the grapes goes a long way to producing the wine you want.

I recall speaking to a vineyard owner who revield he would water the vines before harvest to add weight to the crop when the wine maker would ask for no water prior to harvest to increace sugar levels.

Humm ok in regards to the oak I was thinking along what you said and thanks for the comment on the oak chips, obviously techonology in wine making took a leap.
