Scribes now take a year to hand write using quills and parchment to dutifully copy the Torah.

Moses didn't have to copy anything. After or during the 40 years he would have become a good hand at dictation.

As to whether or not he knew about the mathematical equivalence, who knows? Lets's assume he didn't. That does not mean it wasn't inherent in the writings to begin with, waiting for some future worthy person in another generation, to either trip over it, or work it out or be divinely inspired.
