Roast short ribs
Roast or grille in a roasting pan, turning occasionally:
2 kg of beef short ribs, cut into individual pieces
Two cups of stock
and around ' half a dozen’ of the following:
One cup of wine
100 gm pancetta lardons
100 gm mushrooms
One diced onion
One or two tablespoons of tomato paste
¼ to ½ dozen cloves of smashed garlic
A few squeezes of orange juice
3 to 5 leaves bay leaves
A few teabags of herbs
A few strands of saffron
A few splashes of light soy sauce
A few splashes of liquid smoke
a splash of whisky
