Firstly, when you have many of them they mean something as even Chinese companies are not in the business of just signing MOUs for no reason. They might not buy in the end, but they are at least interested.
The second thing is they allow the scoping study numbers to be justified.
Finally, getting lots of MOUs from the industry shows that management is connected and has the clout to get meetings with the people authorised to sign off on the MOUs.
Personally, I think the site visits are more meaningful. People don't fly all the way to SA unless they are serious.
