We eat a lot of fish and for crumbs we use panko bread crumbs, found in the Asian section of the super market, if you like batter you need to cut into smaller pieces , 4 inches long and 2 wide, for best results make sure fish is dry by pressing with absorbent paper, dust in a plastic bag with flour then dip into batter mix, we use self raising flour with a tea spoon of baking powder and whisk in very cold beer.. if you don't dry the fillets moisture will come out after cooking and make batter soggy..
