Overcooked 500 gm potatoes.
Cool.
Lightly mesh.
Flake 400 gm lightly smoked fish.
In a medium bowl mix potato and fish together.
Season with the following:
¼ cup chopped parsley.
¼ cup chopped tarragon.
in rings compress into fish cakes
Coat both faces with dried bread crumbs, but not edges.
In a pan fry in a little oil.
Bake for at least ¼ hour.
Serve with a cream cheese sauce by mixing the following:
1 cup cream cheese.
A little cream to thin down.
Grated horse radish to taste.
Grated zest to taste.
