sear fish with miso sauce:
In a small bowl mix the following:
¼ cup red miso.
2 tablespoon sake.
2 tablespoon water.
1 tablespoon mirin.
A pinch mustard.
Zest to taste.
A squeeze of lemon if desired.
and some of the following:
a few tablespoons grated radish.
a few splashes worcestershire.
a few splashes xo.
serve with seared fish.
