In a medium saucepan simmer the following until caramelised:
One stick coarsely diced celery.
One coarsely diced carrot.
One coarsely diced onion.
250 gm dates.
1 cup diced fruit.
¾ cup beef fat cut off meat.
Then add the following and simmer for at least 10 minutes:
Beef or veal concentrate stock to taste.
1/4 cup maple syrup.
A dessert spoon tamarind paste.
A teabag of herbs or 1 sprig of rosemary.
A few splashes of light soy sauce.
A few splashes of brandy or sherry.
A few splashes liquid smoke.
Strain out solids.
